Yellow dragon fruit is a different species from the common red-skinned types, and it is measurably sweeter — often twice the sugar content. The fruit is smaller, yellow-skinned with soft spines that brush off at harvest, and the white flesh inside is dense, juicy, and almost floral.

It is slower to fruit and a bit fussier than Hylocereus, which is exactly why you rarely see it in stores. Worth the wait.
